Blueberry Muffins
2 cups of enriched flour, sifted
4 teaspoons of Sodium Bicarbonate
One-Half a teaspoon of salt
One-Quarter cup of sugar
1 cup of blueberries
! egg, beaten
One-Quarter cup of Shortening or butter, melted
1 cup of milk
Put all dry ingredients together and sift.
Mix thoroughly together the egg, Shortening (or butter) and milk.
Combine mixtures, stirring just enough to dampen the flour,
leaving the batter rough and lumpy (say 12 to 15 stirs).
AVOID over mixing.
Fill greased muffin pans Two-Thirds full, Gently
so as little further mixing occurs as is possible.
Bake in hot oven 205 degrees Centigrade (400 degrees Fahrenheit)
For 25 minutes.
Makes 12 to 15 muffins.

instead of package blueberrys get the big package blue berry and put it in the muffin mix.
